The organic residue from gardens, which is generally not used efficiently, has been the central focus of this research work. That why present work factorial methodology in optimization production Pleurotus afín ostreatus using an residue, with primary objective as a substrate, adjusting it through balance C/N ratio, for specific cultivation Pleurotus. This one edible mushroom species worldwide, known its mycelial biomass and bioactive components. comprised several stages, including propagation fungus, generation seeds barley grains, inoculation 5% inoculum polypropylene bags containing four different types substrates, five replicates each variant. resulting was measured, nutritional analysis fruiting bodies obtained substrate highest productivity carried out. results parameters responses afin on by ANOVA method were (p<0.05) F-values models factor A (type substrate), B crop) AB 6.78, 2.99 6.10, respectively. composition determined.
